Obiettivi formativi
L'insegnamento contribuisce alla realizzazione degli obiettivi formativi del corso di studi in Scienze degli Alimenti e della Nutrizione Umana fornendo conoscenze approfondite ed aggiornate sul riconoscimento delle difficoltà psicologiche legate alla tematica alimentare e sulla psichiatria clinica applicata in campo nutrizionale
L’obiettivo dell'inegnamento è quello di approfondire le caratteristiche della relazione tra il professionista e il paziente, nelle sue dimensioni di:
- comunicazione verbale;
- comunicazione non verbale;
- ruolo delle emozioni;
- consapevolezza degli stati somatici ed emotivi del paziente e dello specialista;
- riconoscimento delle difficoltà psicologiche legate alla tematica alimentare (disturbi alimentari, obesità e altre forme non altrimenti specificate).
Si prevede l’apprendimento dei principi di base della psicologia generale, della semeiotica psicologica, dell’assessment psicologico-clinico, delle reazioni alla malattia riferite nello specifico ai disturbi del comportamento alimentare. Le competenze acquisite saranno finalizzate a individuare in questa tipologia di pazienti la psicologia dello stile alimentare e il ruolo compensatorio e terapeutico della dieta in queste patologie. E’ previsto l’apprendimento dei principi della psichiatria clinica applicata in campo nutrizionale, centrata sui Disturbi del Comportamento Alimentare e sul rapporto alterato con il cibo, e allo studio degli elementi psicopatologici correlati all’Obesità. Le competenze acquisite in campo psichiatrico devono porre le basi per comprendere e individuare nei pazienti gli elementi di psicopatologia alimentare e conoscere il ruolo terapeutico della dieta in tali patologie.
The teaching contributes to the achievement of the educational objectives of the course of study in Food Science and Human Nutrition by providing in-depth and updated knowledge on the recognition of psychological difficulties related to food and on clinical psychiatry applied in the nutritional field.
The aim of the course is to provide a deep knowledge on the characteristics of the relationship between the practitioner and the patient, and particularly, in the following aspects:
- verbal communication;
- non-verbal communication;
- role of emotions;
- awareness of the patient's and the specialist's somatic and emotional states;
- recognition of psychological problems related to food issues (eating disorders, obesity and other forms not otherwise specified).
The course aims to provide students with basic principles of general psychology, psychological semiotics, psychological and clinical
assessment, reactions to the illness, mostly with regard to eating disorders. The acquired knowedge will be finalized to identify the
psychology of eating style and the compensatory and therapeutc role of nutritional plans for patients with eating disorders. Students are expected to understand the principles of clinical psychiatry applied to nutritional aspects; a specific focus will be placed on eating disorders, aberrant patterns of eating behaviors, and obesity-related psychopathological aspects. Psychiatric knowledge should underpin the comprehension and the identification of eating psychopathology in clinical practice and the underdstanding of the therapeutic role of nutritional plans for these patients.- Oggetto:

Alla fine di questo insegnamento si dovrà saper:
- riconoscere i segnali espliciti ed impliciti della comunicazione verbale e non verbale
- riconoscere i segnali dell’attivazione fisiologica del paziente, per favorire una comunicazione funzionale
- riconoscere eventuali collegamenti tra le condotte alimentari disfunzionali e la sofferenza emotiva
- avere conoscenza della psichiatria applicata in campo nutrizionale, problematiche psicopatologiche in obesità, ruolo terapeutico della dieta
Capacità di applicare conoscenza e comprensione
Alla fine di questo insegnamento si saprà:
- acquisire competenze teoriche e esperienziali per favorire una comunicazione funzionale ed empatica con il paziente
- acquisire competenze teoriche e esperienziali per modulare la regolazione fisiologica del paziente
- utilizzare competenze relazionali per il raggiungimento degli obiettivi terapeutici
- proporre piani terapeutici multidisciplinari per pazienti con problematiche psicopatologiche collegate al problema della nutrizione.

Alla fine di questo insegnamento si saprà:
- valutare la necessità di una cooperazione d’equipe
- riconoscere i diversi ambiti di competenza dei professionisti
- riconoscere i segnali di disregolazione del paziente
- riconoscere i segnali di condotte alimentari disfunzionali
- effettuare diete includendo le problematiche psichiatriche nella loro progettazione
Capacità di apprendimento
Alla fine di questo insegnamento si sarà in grado di:
- cogliere le influenze e le conseguenze di atti comunicativi espliciti ed impliciti all’interno della relazione d’aiuto
- utilizzare la terminologia specifica per la descrizione dei fenomeni emotivi
- comunicare con i pazienti psichiatrici con problematiche alimentari

At the end of this course the student will able to:
- recognize the explicit and implicit signals of verbal and non-verbal communication
- identify signs of physiological arousal of the patient, to facilitate functional communication
- recognize possible links between dysfunctional eating behaviours and emotional distress
- acquire knowledge of psychiatry applied to nutrition, psychopathological issues of obesity, therapetic role of nutritional plans
Ability to apply knowledge and understanding
At the end of this course the student will be able to:
- acquire theoretical and experiential skills to promote a functional and empathic communication with the patient
- use the relational skills to achieve therapeutic goals
- use the psycho-education to help the patient recognize his/her regulation mechanisms (window of tolerance)
- propose multidisciplinary therapeutic plans for patients with nutrition-related psychopathological problems
Making Judgements
At the end of this course the student will be able to:
- evaluate the requirement of working in team (psychiatrist, psychotherapist, dieticians, Mindfulness instructors)
- recognize the different professionals areas of competence
- recognize the signs of dysfunctional eating behaviours
- realize nutritional plans taking into account psychiatric conditions
Learning ability
At the end of this course the student will be able to:
- gather the influences and consequences of explicit and implicit communication actions within the relationship between practitioner and patient
- use proper terminology for the description of emotional phenomena
- communication skills when working with psychiatric patients with eating problems.

Modalità di insegnamento
Per raggiungere gli obiettivi formativi del modulo Aspetti psicologici, si utilizzano lezioni teoriche e laboratori esperienziali per un totale di 16 ore. Le lezioni teoriche sono supportate da presentazioni (ppt) con illustrazioni grafiche. La frequenza alle lezioni è obbligatoria nella misura del 60% delle ore.
n. 32 ore di lezioni teoriche per il MODULO ASPETTI PSICOPATOLOGICI DELL'ALIMENTAZIONE
L'insegnamento sarà tenuto in aula in presenza, ma a causa dell’emergenza sanitaria dovuta a COVID 19 verrà anche erogato on-line in diretta streaming tramite la piattaforma Webex (con/senza registrazione) esclusivamente per studenti seriamente impossibilitati a partecipare in presenza.
To achieve the educational objectives of this course, theoretical lectures are used for a total of 16 hours.
Theoretical lectures are supported by ppt presentations with graphic illustrations. Lectures are mandatory for at least 60% of the total hours.

Modalità di verifica dell'apprendimento
MODULO ASPETTI PSICOLOGICI DELL'ALIMENTAZIONE
La prova finale di questo modulo è orale e consiste in tre domande aperte sull'intero programma svolto a lezione. Le domande mirano a valutare la comprensione e l’espressione dei concetti oggetto dell’insegnamento, utilizzando una terminologia specifica e appropriata. Ogni risposta viene valutata con un voto da 0 a 10 e la valutazione complessiva per questo modulo viene calcolata come media matematica tra i tre punteggi.
MODULO ASPETTI PSICOPATOLOGICI DELL'ALIMENTAZIONE Presentazione e discussione di un articolo scientifico a scelta sugli Eating Disorder od Obesità ed 1 domanda di carattere generale sul programma. Le due prove hanno il fine di accertare che si siano acquisite le principali conoscenze della psichiatria applicata in campo nutrizionale, delle problematiche psicopatologiche in obesità e del ruolo terapeutico della dieta. Si intende inoltre valutare le capacità critiche acquisite circa la capacità di leggere e discutere un articolo scientifico in psichiatria e di valutarne la possibile applicazione ai casi concreti.
La valutazione finale è costituita dalla media dei voti delle prove relative ai due moduli.

Finchè sussiste l'emergenza sanitaria per COVID 19 la modalità dell'esame è la stessa ma a distanza cion collegamento sulla room del docente via webex
The final examination of this module is an oral test consisting of three questions related to the entire syllabus. The questions aim to evaluate the comprehension and expression of teaching concepts and the student's ability to express concepts using the proper terminology. Each answer is evaluated as a mark between 0 and 10 and the mathematical average is used as the global evaluation of this module.
Presentation and discussion of a scientific article chosen by the student on Eating Disorder or Obesity and 1 general question on the program. The two tests have the aim of ascertaining that the student has acquired the main knowledge of psychiatry applied in the nutritional field, psychopathological problems in obesity and the therapeutic role of diet. It is also intended to evaluate the critical skills acquired by the student regarding the ability to read and discuss a scientific article in psychiatry and to evaluate its possible application to concrete cases.
The mean between the grades obtained in each module will give the final evaluation for the course.
As long as there is a health emergency for COVID 19, the examination method is the same but remotely with connection to the teacher's room via webex.
